Tomato Sauce from Grandma’s Perogies

Ingredients:

  • 1 litre can of Roma plum tomato
  • 2-3 cloves of garlic
  • 4-6 basil leaves
  • 1-2 bay leaves
  • 2-3 shallots
  • Olive oil (first cold press is the best)

Preparing:

  1. Dice the shallots into roughly 5-millimeter cuts. 
  2. Crush the garlic cloves in the saucepan, add oil, and start sautéing the shallots and garlic (fry quickly in a little hot fat). Don’t let this burn; keep stirring. 
  3. Add your tomatoes from the can. If you don’t have enough, you can use fresh tomatoes. 
  4. Add the bay leaves and cook on low heat for an hour. Stir once in a whole. 
  5. When done, blend it all with fresh basil. Season as you like with salt/pepper.
